This is a great thing to put in your lunchbox and eat at school or work. I really love them because they are yummy, and are a good mix up to the usual sandwiches or bagels I eat for lunch and they can be eaten cold. They are best eaten with sweet chilli dip, or a satay sauce.

Notes:
This made about 20 Vietnamese rolls, but this can vary depending on how small or big you make them. I've made mine fairly small because that's how I like them because they fit into a lunchbox better.
It's easiest to prep all your fillings first. So cook the prawns - I chose to marinate mine in soya sauce and sesame oil to add more flavour. I chopped up the vegetables into small batons. I recommend throwing away the middle of the cucumber, as these make a mussiness that I don't like. It's best when all the vegetables are really crunchy as it adds a great texture to it. The noodles I've used are the glass noodles from Lidl (shown in the picture - they are being sold right now as part of the Chinese New Year promotion) but you could also use, rice vermicelli, they have a similar texture and are a bit easier to find in supermarkets. These just needed soaking for 5 mins in hot water, but your noodles might have to be cooked differently.

Ingredients:
Half a cucumber cut into small batons
1 carrot, peeled and cut into small batons
200g of cooked prawns
100g cooked glass noodles
20 vietnamese rice paper
Water
Sweet Chilli Dip
Recipe:
1. Soak the rice paper in water, on the packet it says that it takes 5 seconds, however I find that it takes longer. What I do is soak rice paper and as I take it out of the water, I then put the next one in, and it's usually soft enough to use by the time that I've made one roll. I've found that using a shallow plate (as shown in the photo) is the easiest way to soak, because it doesn't waste any water and it soaks all of the rice paper.

2. Put the rice paper onto a wet surface - so that it doesn't stick. Then layer on prawns, noodles and vegetables to your liking. Take note that whatever you put down first will be the side on show, so make it look the prettiest.

3. The easiest way to keep everything tucked in is to fold the sides (as shown in the photo) first and then roll the rice paper up.

4. Serve with sweet chilli dip.
